We are excited to be partnering with the Hipp family, who produce truly beautiful coffees from Honduras. At the farm, this coffee is depulped and fermented for 18 hours. It is then washed and sorted by density in the water canal. After selecting only the best beans, they are placed in water tanks (anaerobic). The water is changed three times daily for five days before proceeding to the drying stage. This 'Ultra-washed' process results in a very clean and uniform cup that reflects the true terroir and microclimate of its origin.
